I'd imagine the same as any out of date electronics... they get used till they break and can't be repaired, or they end up sitting in a cupboard, forgotten.

I think that manufacturers/stores typically will sell a discontinued camera until they are out of stock - usually at greater and greater discounts. At a low enough price point, they can eventually sell all their stock.
If you really want an older model - check out Ebay. There is a certain kind of camera customer that always needs the latest and greatest.
You will always see lightly used top-of-the-line gear for sale at deep discounts when a new model hits the shelves

I buy discontinued cameras on e-bay very cheap. Frequently they have useful features that have been dropped in current models, optical viewfinders for example. I'm actually selling one now (lol).
Nikon D3100 with Tokina 28-70mm f3.5, (I like to use a Vivitar .43x aux on the 28-70mm Tokina), Nikkor 10.5 mm fisheye, Quanteray 70-300mm f4.5, ProOptic 500 mm f6.3 mirror lens.
