Found a terrific resource for flash photography with Canon speedlights and gear here. Part I explains the different equipment, terms and is a general introduction to flash photography where part II is the more useful part that goes into the different settings and what situations to use them in.

I had a question answered myself - I was scratching my head as to why when bouncing the flash in P mode, it would expose using a short exposure, whereas in Av/Tv mode it would do a long exposure. Kinda confusing when you're shooting an indoor portrait and want to narrow the depth of field, but P mode won't let you program shift, and switching to Av exposes things differently.

Turns out, Auto and P mode will use the flash as the main source of illumination, whereas in aperture or shutter priority mode, it will meter for ambient light and the flash will operate to as a fill in.

As I have said on another thread; Check out a publication called "The Speedliter's Handbook" by Syl Arena. Loads of extremely useful info. Although he majors on Canon equipment there is lots of useful guides for everyone.
If you can't find it, it is available from "Amazon"
