I really like the flash apps that airtightinteractive put out, I've previously highlighted and used their SimpleViewer, as well as their PostcardViewer. Now they've got AutoViewer, which is a kind of full screen slideshow flash app for showing off your photos.
You can create these galleries by manually putting together a script, or using plugins for Picasa or Aperture.
